Tunisian Olive & Tomato Salad
(Mechouia Style)
Ingredients:
- 2 ripe tomatoes
- 1 green pepper
- 1 clove garlic
- 1 tbsp lemon juice
- 2 tbsp Zakia Olive Oil
- Salt & pepper to taste
- Optional: tuna, hard-boiled egg, olives
Instructions:
- Grill or roast tomatoes, pepper, and garlic until lightly charred
- Peel and chop finely
- Mix with lemon juice, olive oil, salt, and pepper
- Serve warm or chilled with tuna and olives
Garlic & Rosemary Olive Oil Bread Dip
Ingredients:
- 3 tbsp Zakia Olive Oil
- 1 clove garlic (grated)
- Pinch of sea salt
- Fresh rosemary (chopped)
- Optional: balsamic vinegar swirl
Instructions:
- Mix ingredients in a small dipping bowl
- Let rest for 5–10 minutes
- Serve with warm crusty bread
Mediterranean Roasted Vegetables
Ingredients:
- Courgettes, red onion, peppers, aubergine
- 3 tbsp Zakia Olive Oil
- 1 tsp dried oregano
- Salt & black pepper
Instructions:
- Preheat oven to 200°C
- Chop all veg into even chunks
- Toss with olive oil, herbs, salt, and pepper
- Roast for 35 minutes until golden
Zakia Green Goddess Dressing
Ingredients:
- 2 tbsp Zakia Olive Oil
- 1 tbsp Greek yogurt or tahini
- 1 tbsp lemon juice
- ½ avocado
- Handful of fresh parsley or basil
- Salt to taste
Instructions:
- Blend all ingredients until smooth
- Adjust salt/lemon to taste
- Serve over salads, grilled chicken, or as a dip
