Tunisian Olive & Tomato Salad

(Mechouia Style)

Ingredients:

  • 2 ripe tomatoes
  • 1 green pepper
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 2 tbsp Zakia Olive Oil
  • Salt & pepper to taste
  • Optional: tuna, hard-boiled egg, olives

Instructions:

  1. Grill or roast tomatoes, pepper, and garlic until lightly charred
  2. Peel and chop finely
  3. Mix with lemon juice, olive oil, salt, and pepper
  4. Serve warm or chilled with tuna and olives

Garlic & Rosemary Olive Oil Bread Dip

Ingredients:

  • 3 tbsp Zakia Olive Oil
  • 1 clove garlic (grated)
  • Pinch of sea salt
  • Fresh rosemary (chopped)
  • Optional: balsamic vinegar swirl

Instructions:

  1. Mix ingredients in a small dipping bowl
  2. Let rest for 5–10 minutes
  3. Serve with warm crusty bread
 

Mediterranean Roasted Vegetables

Ingredients:

  • Courgettes, red onion, peppers, aubergine
  • 3 tbsp Zakia Olive Oil
  • 1 tsp dried oregano
  • Salt & black pepper

Instructions:

  1. Preheat oven to 200°C
  2. Chop all veg into even chunks
  3. Toss with olive oil, herbs, salt, and pepper
  4. Roast for 35 minutes until golden
 

Zakia Green Goddess Dressing

Ingredients:

  • 2 tbsp Zakia Olive Oil
  • 1 tbsp Greek yogurt or tahini
  • 1 tbsp lemon juice
  • ½ avocado
  • Handful of fresh parsley or basil
  • Salt to taste

Instructions:

  1. Blend all ingredients until smooth
  2. Adjust salt/lemon to taste
  3. Serve over salads, grilled chicken, or as a dip
